New Years Dinner


I was saving a Pork Loin Roast from our Amish farmer for a special dinner and since it was New Years this was a good time.

After thawing it, I rolled it in fresh cut sage, dried rosemary, tarragon, sliced garlic, liberal amounts of sea salt and cayenne pepper.  I estimated it’s weight to be around 5 lbs and cooked it at 350* for 3 hrs.  Mmmmm it was absolutely delish.   With it we also had boiled cabbage cooked with fatback, boiled carrots with butter, Indian Dahl and Jasmine Brown & White Rice.

Last night was the very first New Years in 22 yrs that we’ve slept clear through.  It was below 20 with the wind chill and extremely high winds.  I guess no one wanted to venture out to set off their fireworks!   I told Honey that they’ll wake us tonight!
